After countless google searches, I guess my high hydration sourdough transforms into a sloppy mess because it’s humid here? Does this mean I should stick to low hydration? Or do I still go for high hydration but lessen bulk fermentation time significantly? Bc initially my dough DID have gluten. 🤔

Notes for self though:
- More hydration.
- Actually use bread flour instead of all purpose.
- Score deeper and with confidence lol.
- I think I left it in the bulk fermentation stage for too long?
