I did indeed successfully use the setup depicted in the original post. It's not ideal because the small skillet has a slightly convex surface, but it'll have to do.

I think this formalization still requires a family of hash functions indexed by the security parameter. For an actual fixed function like SHA-3 you don't need non-uniform advice.
