I'm not terribly keen on RDR2 either, but there seems to be a lot of crossover with the Witcher 3 crowd.

I would recommend older games too, like Fable 3, if you haven't played it.

One comment about Elden Ring: the game is very malleable. If you don't want to do any of the boss fights, the game is designed in such a way that you can actually skip 90% of them if you want to.
If you like Torment, maybe Diablo 2 Resurrected?

Also not sure if you've tried Breath of the Wild/ Tears of the Kingdom, but those are great if you want to help people find chickens but also have an open fantasy area to putter around in. If you want a tighter experience, Ghost of Tsushima or Horizon or Red Dead Redemption 2 are also great.

Maybe Kingdom Come Deliverance then? More Witcher, but with more history in but first-person camera, and the story is quite good.

If it's a timing/seeing tonnes of numbers thing, those settings can be adjusted, but it depends on your comfort level and how invested you are in the story and the sheer amount of choices. Have you tried Elden Ring? I have friends who are not into Souls games who loved it (I've played it twice).

You might really like the story and the world, especially if you like Torment. The combat is turn-based with a bit of QTE, not CRPG pause and play style. I still say give it a go, but you might enjoy Baldur's Gate 3 if you haven't tried it yet (though I think you have)
