I talked to a cop today, but it was worth it. Arrived at mounted police paddock just when they were leading the horses to their stalls in the barn. I got snuggles from one dude, a dappled guy 18.3 hands high. Another was over 19 hands + 2,300 lbs. Hooves the size of dinner plates and all love.

Oh wow! Crazy, I didn't connect those dots.

OH. I haven't yet read ALL of them.

As a certified preservation librarian, my reaction is "meh." Not all printed books are sacred (if you only knew!) and there's nothing inherently dangerous about the ink or paper that is going to be transmitted to the knife. If you're worried, wipe off the knife before using. FFS.
