Dinner tonight is a pork tenderloin roulade! I butterflied a tenderloin flat, and stuffed it full of a duxelles and apples before rolling it up and roasting it.

Its so good with some buttery mashed potatoes 🤤🤤🤤

I was craving some fish and the market had some salmon on sale!

Gave it a nice pan fry, with some rice pillaf and homemade tartar sauce for lunch. The skin is super crispy, and there isn't any fish smell or taste 😍🐠

It's Hatch chilie season! One of my partners loves these, so I'm gonna make some chili tonight with a bit, and make a fresh batch of hot sauce with the rest!
