My recipe for strawberry rhubarb pie from 15 years ago, much annotated and worn. It reads: Perfect Strawberry Rhubarb Pie 1 recipe double crust pastry Filling: 3 cups rhubarb, sliced thin (1/4 inch-fresh or frozen works equally well) sherbernes 3 cups strawberries, (cut in half, or quarter if large) 1 1/2cup sugar 2-3 tablespoons cornstarch Mix filling ingredients, let sit a half hour or so. Stir once or twice. Preheat oven to 425°. Roll out one 9" pie crust using half the dough, put in tin, fill with fruit and ALL the accumulated juices. Roll out the other half of the pastry dough, cut into long strips, place over fruit filling in a basket weave pattern, if you're feeling fancy. Alternately, use small cookie cutters to cut out a repeating pattern from the circle of rolled dough. Crimp edges, brush pastry with milk, then sprinkle with sugar. Bake at 425° for 15 minutes, then turn the oven down to 375° for another 40 or so, until you see pink frothy bubbles coming up through the lattice and it's nicely browned. (You may have to put foil around edges.) When it's done, turn the oven off, open the door a crack, and LEAVE your pie in the oven to cool...this helps the juices reduce a little further. Don't cut into your pie until it's cool so the juices get a chance to gel all the way. (The corner of the page notes that for a medium size pie, use 2 cups each of the fruit, with 1 1/4 c sugar and 3 Tablespoons cornstarch. For a larger pie, use 3 cups each of fruit, with 1 3/4 C sugar and 4 Tablespoons cornstarch. I used the smaller proportion.)

Today called for strawberry rhubarb pie—the last of this year’s rhubarb, some frozen strawberries, and this standby recipe.

(In case you need something good to eat or good to look at, because it’s been a hell of a week. Wish I could hand deliver one to all the folks who particularly need it.)
