One more thing, there is no right or wrong way to cut tofu. For Mapo Tofu, it is often cubed. I have seen some younger generations of Asians use cute tiny cookie cutters on tofu for their Korean soups or stews.

Chinese people have used tofu for over 2000 years. If anyone knows how to cook tofu, it is Chinese as well as Korean people. For anyone who is not of Asian descent, don't play food police with foods from other cultures. It is tacky AF.
