Today, when one thinks of #maple, they usually think of maple syrup poured over fresh pancakes or waffles, but in early 19th century #NewEngland, maple sugar was the ultimate goal. Syrup would grow mold easily, and therefore, most maple sap was boiled down into sugar, which would last much longer.
