Plus if we assume that shinigami do get new versions of their bodies when they're "born," I feel like there's absolutely no way Undertaker wouldn't jump at the opportunity to experiment on his own corpse LOL.

However, it's this page that convinced me of this theory.
The look on Undertaker's face is strangely vulnerable, strangely personal. He reacts as if Polaris is himself talking, and that he's describing exactly what Undertaker DID choose to do in death (as his life as a shinigami)

Polaris is full of rage and overwhelming passion for his master—perhaps because the trauma that made Undertaker take his own life is still extremely fresh in his memory and he hasn't had decades to calm down like the shinigami version of Undertaker.

Undertaker's life as a human is shrouded in mystery; all we know is that he was very attached to the Phantomhives maybe even before his death. If we consider that he was their butler, there is a possibility that Undertaker took his own human corpse and reanimated it.

We only know a few (actual) butlers in the series, and for Yana to go to the trouble of hiding his face, it's likely we could recognise him. However, Polaris being Sebastian, Tanaka or Agni seems unlikely, which suggests another character we already know was actually a butler.

So, there are only a few things things we know about Polaris:
1. He is a reanimated corpse
2. He was a butler in his previous life
3. He has lost his master at least once before (in the Phantomhive family?)
4. He is ferociously dedicated to R!Ciel (and perhaps the Phantomhives)

(The theory is based on three core assumptions:
1. That Undertaker was once a butler to the Phantomhive family, which is why he's so closely connected to them
2. Shinigami do not retain their original human bodies upon death
3. His face is obscured because we'd recognise him)

Who is Polaris?
I think he could be Undertaker.
