Tl;DR if a group is given the choice of what marker to shed, religion, food, or language, language is the one that makes the most sense to drop, especially if you moved there, rather than their border moving over you. A significant difference between say, Hungarians in Romania versus the US.

Cultural identity and religion are very strongly linked, but they are not synonymous, despite the attempts of both states and religions over the centuries.
There is also the role of individual agency. People tend to believe in their own religion.

Assimilation in a country that has no codified state religion, and who's de facto dominant religion has a plethora of subgroups, means it is *easier* to maintain the religion of your origin than your language, especially if that religion is a subgroup of the larger umbrella.

They seem to think religion and nationalism are intrinsically linked, when one long, *long* predates the other as a concept. Also the role of a state religion, or lack of one. Also inherently linking evangelism to imperialism, which while the two are related, are separate.
