If you're going to use raw meat (e.g. breakfast sausage in a tube), cook the meat most of the way first and use the grease from that meat in place of the oil.

Get a pan large enough to hold the potatoes and oil it to crisp up the potatoes. Optionally, this is when you'd dice a meat of your choice.

Once the oil is hot, put the strained potatoes and optional meat into the pot and then fry to desired crispiness. (cont)

Not entirely sure, but here's the recipe for my breakfast potatoes:

Cube and boil one potato for everyone eating + 1 (so if two are eating, cube 3) until only slightly firm (a fork goes through with little resistance WITHOUT crumbling. On my stove, usually takes half an hour). (cont)
