Vegan here! I can help with tofu. Using extra firm tofu works best. Press it between paper towels with a weigh for 10 minutes to get extra moisture out. Then brown cubes in a pan with a smidge of oil before adding it to a recipe. This helps a lot. Marinating it after pressing also helps!
