Bladesinger (Wizard): B+
Not much to see here. WotC took a great subclass and just updated it for the new rules.
Changed out the Song of Victory to give you attacks instead of Int bonus to weapon damage - which is good, because at this level, you're likely in a "spells first" approach.
Spellfire Sorcery (Sorcerer): C
I find none of these abilities interesting except for the level 18 Crown of Spellfire - which is almost too little, too late.
I thought of making a Heightened metamagic Counterspell build. But with 2024 statblocks, PCs just aren't seeing that many spells cast at them.
Scion of the Three (Rogue): S
Broken build, here we are. This Rogue claps. Teleport and attack as a Reaction? Hello. At level 3?? Good gravy. Everything about this Rogue screams "kill the enemy" and proceeds to follow through.
My only complaint is Myrkul's cantrip selection: who's using Chill Touch?
Winter Walker (cont)
This subclass gives. Good spell selection. The best Hunter's Mark adaptation, and just solid all-around abilities would make me consider playing a Ranger past level 10 (which no other Ranger subclass does).
Winter Walker (Ranger): A-
As much as I'm not a fan of the '24 Paladin, the Ranger got shafted. Entirely reliant on a not-great-feature Hunter's Mark, which requires Concentration, whick locks the Ranger out of their only interesting spells. And the single worst capstone ability in the game by far.
Oath of the Noble Genie (Paladin): B+
I'm not a fan of the 2024 Paladin. I think smiting as a bonus action is a mistake (could easily have limited it to once per turn). That said, I think the Noble Genie is fun with a variety of abilities that don't lean too heavily on each other.
Banneret (Fighter): A
This charisma-based fighter is an amazing leader who buffs and supports their team from the front lines. The only not-completely-amazing ability is Bolstered Rally - as the 60' range will only come into play rarely.
Knowledge Domain (Cleric): B
Again with not many subclass bonuses, but this does some work. Gives the cleric some uniqueness - and when taken with Divine Order: Thaumaturge at level 1, makes the Cleric the undisputed master of Arcana and/or Religion.
Ranking the subclasses from Forgotten Realms: Heroes of Faerรปn.
College of the Moon (Bard): C-
Perhaps limited by Bards not getting many subclass bonuses, this just feels "meh". Blessing of Moonlight needs a recharge ability - upcast it, or spend spell slots or hit dice or something to get it back.

I think the best thing that encapsulates that would be a Wild Magic Sorcerer with the Entertainer background.
If you recognize that it's a problem, then why don't you offer us the opportunity to set it off by default? Or stop turning it back on if we copy a game where it's already off. Or enable Jumpgate. Or do anything, really.

It's very hard to set up new adventures outside the packaged, existing ones - at least not that look anywhere near as good.
Using a whole new kind of character sheet.
