We take for granted the abundance and quantity of meat in the modern diet, when historically meat was special and it was used and consumed quite consciously. It was expensive, and for a reason. Weβve chosen to trade that monetary cost for less visible ones, but itβs still very, Very costly.

But of all things, meat should be the thing we are MOST mindful of on our plate because it has such an outsized and under-discussed impact.
