It’s generally interesting that contemporary Americans want respect for past good deeds but have no interest in responsibility for injuries caused in the past.

Server touches the neck of the wine bottle to the glass, I think β€œvery unprofessional, maybe this isn’t the job for you.”

Distillery worker hands me a dram with their fingers full on inside the glass, and I speak β€œcheers, thank you so much.”

A mark for a great bar is guest of all stripes from all places. The metalheads were in before the show, the locals still had room, the bartenders were asking after the pensioner at the barβ€” making sure he’s getting to the doctor. It a place where I could take my mom or someone with a face tattoo

It’s hard to be a classic place and still be in the zeitgeist but they stay current, every expression available from each new distiller is on hand for the true believers.

There’s no whisky list and they don’t need one. Drams start at very low prices, plenty of multi-thousand Β£ bottles are on available, tell them what you are looking for and they find it or something like it.

Awards season for bars right now and I’d The Pot Still in Glasgow is still holding on as one of the greatest is the world.

I don’t particularly know anybody who works there and I’ve only been thrice but it is the perfect overlap of professional, nerd, and hospitable.

Drink driving laws are very strict in Scotland (they won’t pour for you if you are driving) but the driver’s dram programs are very mature and very generous.

Met legendary millsmith Ronnie Lee at Old Pulteney today. Not a series of made up words. He fixes and rebuilds mills for distilleries, some of these machines have been running for over 150– just requiring an annual check up.

Buddy, that’s what the guests there think too. Two days ago I was in Campbeltown and tour guides were casually dropping master distiller names like baseball hall of famers and in Speyside they are like β€œso it’s made of barley…”
