From there I’d look at leaning into the big guns for tau- so either broadside battle suits or a hammerhead tank- and probably some of the crisis battlesuits! From there get a few more games under your belt and you’ll start to see what things you like and work well for you!

Good stuff! I’d say try to play a few games of combat patrol to get a feel for things (it’s great for learning both the basics and how an army works)
Looking at what you have I would probably look at some more fire warriors (so both characters have a unit to join)

Wonderful work! Can’t wait to see the next 500 points- I’d suggest you think what’s important for next- how it looks? Specific needs/roles for playing? Making a narrative? All can be good questions to ask but it’s about which is most important to you!
