Many Eastern European countries have some sort of version of this dish.
This is my lighter, vegan, faster version of it.
Ingredients
2 Beets pealed and grated
Mirepoix:
2 carrots
2 celery ribs
1 onio (medium)
Olive oil
1 tsp tomato paste
Salt, black pepper and garlic to taste
Start with 1 tsp each

Probably is the salt. My tweak to her recipe is using yogurt instead of milk and also I use soy instead of oats. It feels richer
