Dinner tonight: Mac n cheese with a side of pork belly burnt ends.
Surprisingly, this was my first time making mac n cheese from scratch and is something I need to master in the future. Mistakes were made, cheese sauce was broken, and lessons were learned. Attempt 2 coming soon.
I said simple. It was doctored up a bit by my wife though. Extra cheese and stuff. I didn’t watch her make it.

Yeah. I love the job. Just didn’t like where I was. But I have an opportunity in a different field that feels stupid to not take at time I planned on transitioning to a new department anyways. So I can explore that before going to a new department.

Today was my last day as a police officer.
After 8 years, I’m moving on to a new career.

This week’s meal prep: Birria braised Chashu (from April’s dinner club), shiitake mushrooms in a sweet umami sauce, fried egg, and kimchi on white rice.
