The first image is batching for my recent gf talk, other image is from years ago better showing the cut in question for batching - you can 'reassemble the half grapefruit' in a juice king or other bar pro press, the 1/8 bits go in the orange hand press pictured.

For a la minute, I cut into a quarter, then cut off that core, then again in half for 2 1/8 pieces, then use an orange hand press. Each 1/8 is about 3/4oz. If batching, I stop at the quartet, then press 2 quarters in a juice king, strain, and into cold storage.

Much more noticeable in bitter citrus such as some pomelo, 'sour' oranges, grapefruit, and lime: lemons less and 'sweet' oranges negligible; Your milage may vary according to personal taste.

The central core is the 'umbilical cord' of the fruit and in bitter citrus contains most of the unpalatable material (such as naringin also in the pith) and does not contribute to any flavors which are in the juice sacs. Removing gives easy access to sacs avoiding flavorless bitter.

I grew up in 70s Orange County suburbs: No one told me my culture was 'commercial' culture or that it would soon be destroyed to make way for the next commercial fad. Tiki and tropicalia was my culture. This is my meaning to saying "I was born Tiki." We do not own our culture; Our culture owns us.
