There are loads that could be included, depending on how broad you want to make it:
Between The Buried And Me, Ihsahn, Leprous, Mastodon, Gojira, Ayrean, Boss Kelloid, Devin Townsend, Collibus, Haken, Oceans of Slumber, Intronaut, Protest The Hero, etc.
And then there's the whole Djent thing too.
Hard to define precisely, because by definition it's varied & often musically experimental. Broadly, I guess it includes mostly long (and often quite 'technical') compositions, varied music (often classical/jazz influenced) but metal-based, big instrumental bits, etc.. Opeth would be a good example.
