I used about half all purpose flour and a mix of 2:1 whole wheat and rye flour for the remainder for the batter for these. Need to add a splash of extra milk since the whole grain flour is thirstier than the AP.

I mise'ed out the pumpkin crumpets yesterday (bc it was well past tea-time/afternoon snack by the time I actually got into the kitchen).

Mixed & griddled them today... so tasty! Eating a few hot off the stove w. apple butter & makin egg sandos tomorrow AM.
