Like if the dish lacked them, you wouldn’t be like wtf is this unfinished dish. But their presence rockets it to a way higher level.

Not to be too pedantic but it’s more like chives and chili oil on the egg, scallions & blue cheese on wings, pomegranate seeds and crushed pistachios on a pancake, basil and hazelnut oil on mozz & prosciutto — finishing components, not essential sauces

Some real big-brain stuff going on here to interpret an article about the perspective of & effects on restaurant operators/workers (it’s literally & figuratively their business!) to be instead about whether diners should care laterally about other diners.

I mean, you are absolutely right! Garnish IS elements! One of the greatest tragedies in modern American home cooking has been the idea that the finishing elements are optional

Those generously buttered noodles need a grind of black pepper or a handful of micro planed parm!

These are "easy" "unimpressive" "everyday" recipes—iceberg salad, slow-cooked chicken stew, roasted carrots with yogurt—but they feel special, elevated because of how they're plated & garnished. Beauty is a real & big aspect of gastronomic pleasure!

This came up bc someone on Threads was asking for “impressive” recipes and the truth is 90% of “impressiveness” — if you’re already a competent cook — is plating and finishing. Make it look nice (cool serving dish, sauce beneath not on top, etc) & make the effort visible (finishing/garnish)

I’d like to introduce yall to Rosner’s Law of Double Garnish:

Every savory dish is made better by not one but TWO finishing elements added just before serving: one brightening (green herbs, lemon zest/juice, pickled onion), one deepening (cheese, nuts/seeds, toasty breadcrumbs, oil drizzle)
