It is true. Dark pans result in darker baked goods which is why a lot of recipes tell you to decrease the baking time by 3-5 minutes.

Itโ€™s more work and less reward because it makes the cream cheese loose which means itโ€™s more likely to split the pastry while it bakes (ask me about that trauma). Itโ€™s the reason a lot of recipe developers leave the pastry open ๐Ÿ˜‚
