Last step: Into the lefse "prugs" to rest (I am just guessing the spelling here)! These are stacks of my grandmas white flour sack towels. They are used for lefse and lefse ONLY, and are the same ones SHE only used for HER lefse. My uncle added the binder clips so we can pull them up in one bundle.

As the flipper, my job is to make sure the lefse is the perfect hue w/o being over/underdone, and comes off the grill in 1 piece. When something goes awry, lefse becomes a "rΓΈdding" (roughly, "a little mess" - not sure of the actual word). We get to eat the "rΓΈddings" so mistakes are appreciated..

Mom has the onerous task of rolling today. We are not a "perfect circle" family. We are an "all forms are welcome" family. My grandma could roll hers out until the paper thin, translucent edges hung over the sides of the board.

Over the years the process has evolved quite a bit - like using an ice cream scoop to make the balls of "riced" potatoes (ahem). Grandma would never. We fill bunches of trays, cover them with foil, and take them outside to chill. Best on a snowy day.

Another benefit of no streetlights and a good layer of snow on a clear night: catching the local wildlife meandering down the street when you wake up and get a glass of water at 2am (a pic from last week).

I live across the river/s from MSP and StP in a neighborhood that has never had streetlights. On winter nights like this, I could stare out the window for hours. The light created by the cities + snow + cloudy/clear skies changes by the minute. Always feel lucky to β€œcatch” a view like this one.

Everyone I know who has had shingles has a horror story. One acquaintance developed ocular shingles - experienced temporary blindness in one eye, had terrible lingering symptoms, and was on an intense steroid treatment for nearly a year.

Today was the PERFECT day for 5-minute bialys. Not quite the real thing, but close enough, and you can toss in jalapeΓ±os, carmelized onions, tomatoes, bacon - anything you want in the middle. I make β€˜em just like grilled cheese, but steam a bit using a pot lid. 🀌🀌🀌

Man, what a waste. A quick read through more recent Tripadvisor reviews + responses from ownership, and it's pretty clear the new owners may have been way out of their element from the get-go (and had a grave misunderstanding of their most loyal client base).

I don't share the same kinds of things online, but what I'm seeing is that this is the platform where I have the most engagement with REAL PEOPLE - and of course, reactions are sometimes bleak!
