Temperature in LLMs controls "creativity". It works because LLMs output a probability of tokens and choose one based on it.
The higher the temp the bigger the difference between the most probable token and the other:

temp = 0:
0.5, 0.2, 0.18, 0.12
temp = 20:
0.999, 0.001, 0, 0
