Yeah, take Monster Hunter for instance, you're competing with EVERYBODY for views, when instead if you jumped on a retro game or something more niche, you could really carve out a spot for people to filter into.

I always keep an eye on the number of visitors. Over time you get a feel for what games are more popular due to the crowd surging on those nights.
But you could just go to the games tab of twitch and see what's popular, usually the best bet is a lesser-known game who somebody popular is playing.
