Yes, I read Vol #1 and enjoyed it. I'm recently bought Vol #2 as part of the Simon and Schuster e-book sale and want to read that one, especially since Commander Thelin from TAS has a story in that book and I want to read more about that character.
Thanks for the kind words. I read Volume #1 - Infinity's Prism and it's pretty good. It's a bit like Marvel's "What If ...?" show.
While I don't think it's related to TNG's "Parallels" episode, there is the 3-volume "Star Trek: Myriad Universes" anthology books which contain short stories about alternate versions of various Trek characters who led very different lives compared to what we saw on screen.
Nice pick. That's one of earlier and better episodes which focused on parallel universes (it even has that word in the episode title π).

That is a deep cut in the novel. One of the things I like to find when reading a Trek novel are those references to past Trek episodes. It's a bit of a treasure hunt.
Yes, I wouldn't mind having a Trek series focus on that era as well the eras between TNG & PIC and after PIC (e.g. "Legacy"). The Trek novels did have a "Lost Era" series which took place between TOS and TNG.

Yes, I liked how ENT spend time talking about the Andorians, as represented by Comb's Shran. We only had snippets about them in previous Trek shows.

Yes, between bringing back the Romulans, giving more focus on the Andorians and seeing the beginnings of what will be the Federation, those 3 episodes were one of my favorite mini-arcs from Season 4.
