I'm no marketing expert, but maybe this trend isn't necessarily about *graphics* and more about how companies could be making games at lower price points and can run on a larger number of computers
A lot of today's indie darlings are selling themselves, at least partially, on being considerably more affordable than their AAA counterparts
And let's not forget that an ever bigger trend now are games that you can get for free on your phone

I'm thinking about this and I don't even disagree, you could also point to games like Deltarune shaping this trend...
...but I think it's also important that a lot of these games are either cheap or free
