Soak in water for an hour or so, before putting them in the fridge. If the shrivel before you use them, soak them again. It is best to leave them in the ground or at the store until you need them. Keep in mind that at the store, they are either in a package or getting spritzed to keep them fresh.

I've used them to make yummy tea, but I have never tried just biting them off the twig. Now I feel challenged to try it. :)

I used to candy violets as a child, the idea brings back fond memories. If I remember right, I used lightly beaten egg white and powdered sugar and allowed them to dry naturally. Now days, I find they are fun frozen into ice cubes or used for sun tea with a few leaves of mint added.
