Not wanting to forget our humble Halloween beginnings, this Friday (10/31) we’ll be releasing a brand new beer brewed to celebrate Mousetrap’s eighth anniversary. Beer for Cake is a Black Forest cake inspired Marzen with black cherry juice, lactose, and cocoa nibs.

October 31st, 2017 we quietly opened Mousetrap to the public for one night. A few days later we loudly announced our official opening and had an appropriately epic celebration on FOBAB Saturday. That was so much fun it’s become a yearly tradition.

We added as much fermentable sugar as our equipment and yeast can tolerate and then conditioned the beer on 50% more crushed vanilla beans and 50% more cocoa nibs than we’ve ever used before. A moderate dose of lactose sugar provides additional sweetness.

While OG DinoS’mores focuses on Scandinavian brewing techniques which place a greater emphasis on variety of roasted malts and drier body to create bitterness, Double Stuffed DinoS’mores captured the American brewing spirit of cramming way too much into the same sized package.

Like a perfectly toasted marshmallow, the flavor teeters between honey and roasted but avoids any burnt notes. The heavy alcohol only lurks well after the brew is quaffed but will leave you feeling as warm as leaving your shoes too close to the campfire.

Lively acidity & a fruit salad potpourri of kiwi, candied lime, green strawberry, and blossom honey surge forth over a china bone white foam. Palate is a crowded affair of peach flesh, honeydew melon, cherries, & white pepper.

The soil is an amalgam of “wind deposited ancient or sedimentary alluvials and decomposed basalt over a lime-silica hard pan” which the grower makes sound of great importance but we are but simple brewers and that goes entirely over my head.

Orange Ghost follows this methodology using our collaborative wild fermented wit beer “Ghost Lemons” made with Allagash in 2023. Five hectoliters of the beer was racked into a mature Italian wine puncheon and laid to rest on top a bed of crushed Roussanne white grapes.

Unlike conventional modern white wines, they are typified by allowing a period of skin contact after white grapes are crushed in a process more akin to red wine production. This skin contact extracts additional tannins, phenols, and of course color compounds.

Orange wine is a lesser known but increasingly popular subset of natural and minimal intervention wines going back likely thousands of years to the Eastern European country of Georgia.

Flavor wise expect a complex blend of watermelon rind and candy fruitiness wafting from the slightly pink-hued ale. Mild sweetness with saline mouthfeel play against the watermelon overtone. The dry and bright finish will leave you racing for more.
