I started making sourdough because gluten-free bread is too expensive for how unfulfilling it is. Plus, my dietitian thought I could tolerate it since I’m gluten sensitive but don’t have celiac. A month in and I’m miraculously not having reactions. And I’m finally eating delicious, filling bread 😭

Everyone loves to quote 1984 by Orwell, but it’s Animal Farm for me. I swear that novel is chronically relevant.
