One favorite: Spice Cake Mix cookies
box of Spice Cake Mix
1/2 cup veggie oil
2 eggs
1/2 cup chopped nuts (optional)
sugar in a small bowl

Mix all but sugar with spoon until smooth.
Chill for 20 minutes.
Form into balls then roll around in sugar.
Bake on parchment lined pan for 9-11 mins at 350*
