it's one of my favorite things to do in the kitchen because it's turned a slog of shitty, messy, hard work into something manageable and not as messy. had a daydream, came up with this, stopped at harbor freight on the way in one day and we've been doing it this way ever since

i blame the lack of caffeine so far this morning

i come from the work smarter not harder school of the service industry. anything i can do to make my job faster and more efficient so i can sit down earlier and more often

obviously this isn't something you'd pick up for home use. with small/home volumes, just juice like normal and then freeze it. it saves a ton of space in your freezer too which is always a bonus

you can try it! i found that peelers dug too far into the pith and this was the best working example i could find. here's some yuzu i did a while back. it's hard to get where you spike it for obvious reasons, but it's a diminishing returns thing for us. plus we crush to juice so that oil comes out

i posted a couple pics, but basically you're just spiking it on the drill bit and then zesting as it spins

with the microplane you can avoid the pith pretty easily. it's just mostly about getting the touch down just right, but it takes about five minutes for someone that's never done it before to be good at it
