1965 Fannie Farmer is back with today's Lenten special, Shrimp Wiggle. I'm not sure where the wiggle part comes in b/c this reminds me a bit of Creamed Chipped Beef. What do you think? 🍽️ 🍜 #FoodSky #Cooking #Recipes #RecipeOfTheDay

HUSH PUPPIES
About Twelve 2½-Inch Puppies
Fishermen used to cook these finger-shaped concoctions on the river bank, along with their catch.
Rumor has it that they threw a large number to their clamorous dogs with the admonition, "Hush, puppy!" Sometimes we think that is still the best use for them.

Mix together:
   1 cup stone-ground cornmeal
   1 teaspoon double-acting baking powder
   ½ teaspoon salt
   2 to 3 tablespoons minced onion
Beat together:
   1 egg
   ½ cup milk
Combine with dry ingredients and form into oblong cakes or pones, about 2 x 4 x ¾ inches. Fry in deep fat heated to 370° until golden brown.
Drain on paper toweling and serve at once.

I figured this might be a nice addition to the Lenten season. Growing up, Hush Puppies were a brand of shoes. I didn't know about these deep-fried balls until I was an adult. From 1965, The Fannie Farmer Cookbook

Walnut Meringue Bars
Butter a shallow pan about 8 by 12 inches. Set the oven at 300°.

Cream together
   ½ cup butter
   1 cup light brown sugar
Add
   ½ teaspoon salt
   1 teaspoon vanilla
Beat in
   2 egg yolks
Sift together
   1¼ cups flour
   1½ teaspoons baking powder
Add to the butter and sugar. Stir until blended. Spread evenly in the pan.
Beat until stiff
   2 egg whites
Beat in
   1 cup light brown sugar
Add
   1 cup chopped walnut meats
   1 teaspoon vanilla
Spread over the cooky mixture. Bake 35 minutes. Cool. Cut in squares with a very sharp knife. Lift out carefully with a spatula. Makes about 50.

From 1943, The Modern Family Cookbook by Meta Givens

SALISBURY STEAK
1½ Ibs. ground beef chuck, or rump 
1¼ teaspoons salt
Pepper to suit taste
2 teaspoons grated onion
1 egg, beaten
Melted butter

Purchase meat in the piece and have it ground once. Combine all ingredients except butter, mixing thoroughly but lightly. On a buttered shallow baking pan, mold the meat into the shape of an oblong or a sirloin or porterhouse steak, making it about 1¼ inches thick, and pushing edges up so they will be square, like a steak. Brush top and sides with melted butter and place in a hot oven (450° F.). Bake 10 minutes, then reduce heat to 325° F. (moderately slow) to finish cooking, which will take about 25 minutes longer. Brush with butter once or twice during baking. Slide carefully onto hot platter, using pancake turner. Serve with Tomato Sauce if desired, or with more melted butter. 5 servings

My family likes my Salisbury Streak recipe, but this is not it. I do find it amusing that this is shaped into a steak form, though. I like to serve this with mashed potatoes, green beans & a mushroom gravy rather than a tomato sauce. What do you think of this 1943 version? 🍽️ 🍜 #FoodSky

A Baked Ham, richly glazed and decorated with cloves and colorful candied cherries, is a picture all by itself; when accompanied by frosted, seedless green grapes on pineapple slices, it becomes a masterpiece. The tiny clusters of grapes are dipped first in slightly beaten egg white and then in granulated sugar. Fresh mint leaves add a touch of realism to the frosty clusters.

Does anyone still make the main course look like it should be on the cover of a magazine anymore? This Baked Ham from Nana's 1943 cookbook is ready to serve with Pineapples, candied cherries & frosted grapes. Let me know if your holiday meals look presentable like this. 🍽️ 🍜 #FoodSky #Cooking

It's so easy, pan-broiled bacon, drained & then chopped. Arrange cabbage ( I think shredded would be good, but sliced is fine too) on buttered bread, sprinkle chopped bacon, and cover with 2nd piece of bread. Ta-Da!

A meal plan for: SUNDAY

Breakfast-
Sliced bananas on prepared cereal, top milk.
Poached eggs 
Toast with butter
Coffee for adults. cocoa for children

Dinner-
Swiss steak 
Mashed potatoes
Buttered green beans
Bread and butter
Raw carrot and peanut salad 
Lemon pie
Coffee for adults. milk for children

Supper-
Watercress or cabbage and bacon sandwiches on whole wheat bread.
Cherries 
Tea for adults. milk for children.

TIP:
Whenever you wish, replace whole wheat bread with the enriched.

There isn't anything fancy about this 1950s classic from Betty Crocker. It's simple, straightforward, and delicious. Just what my Saturday needs after a big round of Storms. Anyone else looking for some comfort food today?

FRESH COD À LA PORTUGAISE
4 Servings

Season:
with:
   4 thick cod fillets
   Pepper
Place the fish in a heavy saucepan. Add:
   1 finely chopped onion
   1 crushed clove garlic
   1 cup coarsely chopped parsley
   A sprig of thyme
   3 peeled, seeded and coarsely chopped tomatoes
   ½ cup dry white wine
Bring to boiling point, » reduce the heat and simmer gently, covered, about 10 minutes. Remove the fish carefully. Arrange it on a hot serving dish and keep warm. Reduce the cooking liquid by one-third.
Season to taste
and finish with a:
   Butter Swirl,
Pour the sauce over the fish and serve at once.

From 1943, The Modern Family Cookbook by Meta Givens

BAKED CARROT PUDDING

1½ cups all-purpose flour
½ cup shortening
1 teaspoon salt
1 cup light brown sugar, firmly packed 
1¼ teaspoons cinnamon
¼ teaspoon cloves
½ Nutmeg
1 cup grated raw carrot,(4 medium-carrots)
2 teaspoons tartrate or calcium-phosphate baking powder OR
    1½ teaspoons S.A.S.-phosphate baking powder
1½ cups finely chopped apple (3 medium-sized apples)
¾ cup seedless raisins

Sift flour, measure, and resift 3 times with salt, spices and baking powder. Cream shortening thoroughly and gradually blend in sugar. Add carrot, apple, and raisins and mix thoroughly. Add flour mixture slowly, mixing until well blended. Turn into buttered individual molds; bake in a moderately slow oven (325° F.) for 50 minutes, or steam for 1½ hours in covered molds. Serve hot with Lemon Sauce). 8 to 10 servings.

Easter is just 30 days away, & perhaps you're already thinking about a dessert to bring to a gathering. Nana's 1943 cookbook says, "Why have carrot cake when you could have Carrot Pudding?" With carrots, apples, & raisin's, it's sure to hit all the right notes. What do you think? 🍽️ 🍜 #Foosky

Yes. According to the book, you parboil them until nearly tender, around 10 minutes. Then fill and serve.

GREEN PEPPERS STUFFED WITH CORN A LA KING
6 Servings

Prepare for stuffing:
   6 pepper cases
Place in a double boiler → over—not in—boiling water:
   2½ cups drained corn niblets: 
      1 No. 2 can
      1 chopped canned pimiento
You may add:
    (4 slices sautéed minced bacon)
    (2 tablespoons minced onion that has been sautéed in the bacon fat    and drained)
Combine, beat and add to the above:
    1 egg
    ½ cup milk
    1 tablespoon soft butter
    ¾ teaspoon salt
    ⅛ teaspoon paprika
Cook until the mixture is slightly thickened, about 15 minutes. 
Fill the peppers and serve.

BAKED ACORN SQUASH WITH LITTLE PIG SAUSAGES

3 medium-sized acorn squash
1 tablespoon butter
1 lb. pork link sausages

Cut squash in halves and remove seeds and fibers. Butter cut surfaces and place cut side down on a baking sheet. Bake in a moderately hot oven (400° F.) 30 to 40 minutes, or until squash is tender when pierced with fork. (If desired, squash halves may have a mixture of brown sugar and butter sprinkled over their rims; then return to the oven to toast to a luscious brown.) Just before serving, broil the sausages until nicely browned on both sides, but not dry or shrivelled. Arrange sausages in cavities of squash halves, and serve. Sausage patties may be used instead of the links. 5 or 6 servings.

Peanut Macaroons

Butter a cooky sheet. Set the oven at 300°.
Prepare
   5 tablespoons chopped skinned peanuts
Beat until stiff
   1 egg white
Add gradually, beating constantly
   ¼ cup sugar
Add the peanuts. Stir in 
   1 teaspoon vanilla
Put on the cooky sheet by teaspoonfuls, 1½ inches apart. Garnish each with half a peanut.
Bake until dry (12 to 15 minutes).
Makes 16.

SNOW PUDDING
1 tablespoon plain gelatine
¼ cup cold water
1 cup boiling water
6 tablespoons lemon juice (2 lemons)
2 egg whites
⅔ cup sugar

Soften gelatine in the cold water; pour boiling water over it and stir until dissolved. Add sugar and lemon juice; chill until mixture begins to congeal. Then whip. Beat egg whites until stiff and fold thoroughly into
gelatine mixture. Cover bowl and chill in refrigerator until firm. Serve in sherbet glasses. Serve with Custard Sauce (930). 5
