BAKED ACORN SQUASH WITH LITTLE PIG SAUSAGES
3 medium-sized acorn squash
1 tablespoon butter
1 lb. pork link sausages
Cut squash in halves and remove seeds and fibers. Butter cut surfaces and place cut side down on a baking sheet. Bake in a moderately hot oven (400Β° F.) 30 to 40 minutes, or until squash is tender when pierced with fork. (If desired, squash halves may have a mixture of brown sugar and butter sprinkled over their rims; then return to the oven to toast to a luscious brown.) Just before serving, broil the sausages until nicely browned on both sides, but not dry or shrivelled. Arrange sausages in cavities of squash halves, and serve. Sausage patties may be used instead of the links. 5 or 6 servings.

Peanut Macaroons
Butter a cooky sheet. Set the oven at 300Β°.
Prepare
5 tablespoons chopped skinned peanuts
Beat until stiff
1 egg white
Add gradually, beating constantly
ΒΌ cup sugar
Add the peanuts. Stir in
1 teaspoon vanilla
Put on the cooky sheet by teaspoonfuls, 1Β½ inches apart. Garnish each with half a peanut.
Bake until dry (12 to 15 minutes).
Makes 16.

1 tablespoon plain gelatine
ΒΌ cup cold water
1 cup boiling water
6 tablespoons lemon juice (2 lemons)
2 egg whites

Soften gelatine in the cold water; pour boiling water over it and stir until dissolved. Add sugar and lemon juice; chill until mixture begins to congeal. Then whip. Beat egg whites until stiff and fold thoroughly into
gelatine mixture. Cover bowl and chill in refrigerator until firm. Serve in sherbet glasses. Serve with Custard Sauce (930). 5

Fro 1943, The Modern Family Cookbook by Meta Givens
SPAGHETTI SOUFFLΓ WITH CREAMED HAM
ΒΎ package spaghetti (5-6 oz.)
2 tablespoons butter
3 tablespoons flour
1 teaspoon salt
1Β½ cups milk
3 eggs, separated
3 cups unseasoned medium white sauce
2Β½ cups diced cooked ham
Salt and pepper to suit taste
Dash pepper
Drop broken spaghetti into 1Β½ quarts boiling salted water and boil uncovered until just tender (about 20 minutes). Drain, rinse well with hot water, and again drain. Melt butter, blend in flour and salt, add milk, and stir over direct heat until sauce boils and thickens. Cool and stir in pepper and beaten egg yolks; fold in spaghetti. Beat egg whites until stiff and fold in thoroughly.
Turn into buttered casserole or ring mold and
bake in a moderately slow oven (325Β° F.) for 45 to 50 minutes, or until a sharp knife inserted in the center comes out clean. Combine unseasoned white sauce with the ham, and season to suit taste. Unmold spaghetti souffΓ© onto hot platter and serve with creamed ham. Macaroni may be used in place of spaghetti.

SALMON AND RICE CASSEROLE
1 1-lb. tin pink or red salmon
2 tablespoons chopped parsley
1Β½ teaspoons salt
2 tablespoons lemon juice
Β½ cup fine dry bread crumbs
Wash rice thoroughly through several cold waters; drop into 1 quart rapidly boiling salted water and cook briskly until tender (about 20 minutes). Drain and rinse in hot water. Beat eggs thoroughly and combine with milk and rice; toss butter and crumbs together and stir into mixture. Then add flaked salmon from which skin and bones have been removed, and remaining ingredients. Turn into a buttered baking dish or into individual custard cups, and bake in a moderately slow oven (325Β°F.) for 30 to 40 minutes. Serve hot. 5 servings.

PISTACHIO ICE CREAM
About 9 Servings
A pretty Christmas dessert served in a meringue tart garnished with whipped cream and cherries.
Shell and blanch, 562:
4 oz. pistachio nuts
Pound them in a mortar with:
A few drops rose water
Add to them:
ΒΌ cup sugar
1 cup cream
1 teaspoon vanilla
Β½ teaspoon almond extract
A little green vegetable coloring
Stir these ingredients until the sugar is dissolved.
Heat, but do not boil:
1 cup cream
Add and stir until dissolved:
ΒΎ cup sugar

Chill these ingredients. Add the pistachio mixture and:

A moist loaf with a delicate fresh fruit flavor.
Mix together thoroughly..

Sift together and stir in

Gnocchi alla Romana
Especially good with SautΓ©ed Veal Cutlets (p. 194), Smothered Chicken (p. 216) or Chicken Cacciatora (p. 217). Convenient to prepare in advance ready for the final browning just before serving time.
Put in a saucepan
ΒΌ cup butter
Heat until bubbling. Take from the stove. Add
ΒΌ cup flour
ΒΌ cup cornstarch
Β½ teaspoon salt
Stir well. Stir in slowly 2 cups milk
Cook 3 minutes over low heat, stirring constantly. Add
2 egg yolks, slightly beaten
Β½ cup grated Parmesan cheese
Pour into a buttered shallow pan, about 10 by 14 inches. Chill.
Turn out on a board. Cut in squares, strips or diamonds. Arrange on a buttered ovenproof platter. Sprinkle with ΒΌ cup melted butter
ΒΌ cup grated Parmesan cheese
Bake at 400Β° until brown (about 15 minutes). Serves 6.

RICE MUFFINS
1 cup all-purpose flour
1 tablespoon sugar
Β½ teaspoon salt
2 teaspoons tartrate or calcium-phosphate baking powder, or
1Β½ teaspoons S.A.S.-phosphate baking powder
1 egg

1 cup boiled rice (174)
1 tablespoon melted shortening
Sift flour, measure, and resift twice with sugar, salt, and baking powder.
Beat egg thoroughly, add milk and drained cooked rice; stir in shortening and immediately add the flour mixture, and stir until dry ingerdients are just dampened; then stir 3 or 4 more times, but not until smooth. Dip quickly into buttered muffin tins, filling them β
full. Bake in a moderately hot oven (425Β° F.) for about 20 minutes, or until nicely browned.
Serve hot. 8 to 10 medium-sized muffins.

FRENCH-FRIED FISH
Β½ cup yellow cornmeal

Β½ cup four
2 lbs. fish fillets or steak
Mix together thoroughly the cornmeal, flour and salt, and place in a shallow pan. Dip the serving-size portions of fish into cold water; then roll in the cornmeal mixture until covered on all sides. Put fish into a wire frying basket, just one layer deep. Lower basket into deep fat heated to 385-400Β° F. (or until a β
-inch cube of day-old bread will brown in 15 to 20 seconds). Fry until fish has an even golden brown crust (4 to 8 minutes, depending on variety of the fish). 5 servings.

QUICK CHERRY CRUNCH
A 9 x 9 x 2-Inch Pan
A well-flavored, easy cherry pastry.
Preheat oven to 350Β°.
Mix and let stand 15 minutes:
Β½ cup cherry juice
1Β½ tablespoons quick-cooking tapioca
Melt in a large pan:
Β½ cup butter
Mix with it:
1 to 1Β½ cups packed brown sugar
1 cup all-purpose flour
1 cup quick-cooking oatmeal
ΒΌ/ teaspoon each double-acting baking powder, salt, and baking soda
Put half of this mixture into the baking pan.
Scatter over it:
2 cups drained canned red cherries
and the juice and tapioca mixture. Cover the fruit with the other half of the pastry mixture.
Bake 30 to 35 minutes or until brown.

ENGLISH MUFFINS
1ΒΌ cups milk
ΒΎ teaspoon salt
1 cake compressed yeast or
ΒΌ cup lukewarm water
4 cups sifted all-purpose flour
3 tablespoons butter, melted
1 package fast granular yeast
Scald milk with salt, and cool to lukewarm. Soak yeast in lukewarm water and add to cooled milk. Add half the flour gradually, beating with wooden spoon until flour is thoroughly mixed. Add the cooled, melted butter and beat until smooth. Then beat in remaining flour. Put into clean greased bowl and moisten top of dough slightly with a little water; cover with waxed paper and let stand in a warm place (about 85Β° F.) until dough is light (about 2 hours). Turn out on lightly floured board and knead gently. Roll out to ΒΌ inch thickness and cut out in 3 to 4 inch rounds. Place on floured board and let stand in warm place until they begin to get light (about 45 minutes). Then bake over low heat on a slightly greased, moderately hot griddle (300Β° F.), about 20 minutes on each side. Cool. When ready to serve, split muffins and toast each half on both sides in oven or broiler. Spread generously with butter and serve piping hot. Makes about 12 muffins, 4 inches in diameter.

CODFISH CASSEROLE
Β½ lb. salt codfish
3 tablespoons butter
3 tablespoons flour
1 No. 1 tin peas
Milk
1 cup grated cheese
Salt and pepper to suit. taste

cup fine dry bread crumbs
2 tablespoons melted butter
Freshen codfish (421). Drain and flake the fish. Melt butter, blend in four, and add liquid drained from peas, to which enough milk has been added to make 2 cups. Stir constantly over direct heat until thickened; then add grated cheese. Add seasonings. (Salt may not be needed if fish retains enough salt.) Fold in drained peas and flaked codfish and turn into a buttered casserole. Mix crumbs with melted butter and sprinkle over top. Bake in a moderately slow oven (325Β° F.) for 45-50 minutes.
