However, iron in vegetables has low bioavailability – it's not easily absorbed in the body. This is partly due to polyphenol compounds binding iron. However, spinach is a good source of vitamin A! The high amounts of oxalic acid in spinach can cause 'spinach teeth', leaving your teeth with a chalky feel. This is due to reaction of the oxalic acid with calcium ions in the spinach and in your saliva, forming poorly soluble calcium oxalate crystals which coat your teeth.
