Quickly fold your tortilla in half, pressing your spatula onto it so the cheese can glue it closed.
Then simply let it crisp up, set aside, and do the next one.
Mine made 12 of these tacos! Eat up and eat well ~ !
Add some of your cilantro mixture and a spritz of lime, before adding more pepper jack to achieve what comes next.
Once all your chicken is cooked, it’s time to put everything together.
Reduce the heat of the pan you were using, then lay your corn tortilla into it. As that side sears, grate in a generous amount of pepper jack before sprinkling in some chicken on only half the tortilla.
Now that your pan is searing hot, add some olive oil and dump in your chicken in batches. When the chicken reaches 165 Fahrenheit internal, dump them into a separate bowl and do the next batch.
If you can still see chicken, add more
While you wait for your pan to get nice and hot, clean your chilis of their seeds and mince them down alongside some cilantro
If you have a food processor, you can do so that way and add some lime juice. However if you don’t, the lime juice can be added later.
After you add some olive oil, sprinkle in a generous helping of your garlic powder, onion powder, smoked paprika, and chili powder. Sprinkle in salt and pepper to your desired amount, before massaging the meat to make sure they are fully covered.
Slice down your chicken breasts into bite sized pieces, add them to a bowl!
- Two pounds boneless chicken breast

- Salt
- Black pepper
- Olive oil
- Cilantro
- Lime juice
- Onions
- Peppers (I used Thai chilis I had in the freezer :D)
