baking time

Starter has risen well over night time to get baking.

Baked loaf from the previous recipe posted.

From the other days bake.

100g light rye.
100g malted seeded
300g white strong bread 15% protein.
75g start
365 H2O
25g Mixed seeds.
10g sea salt.

Started with 1 hour autolyse of the flour, seeds, salt and water, then added the starter after and folded it in.

Haven't posted in a while will be more.

Maisie is coming along so well now, I have my base starter as i call it and then when i bake i just take out what i need.

At the moment i am at 1:5:5 and loving it.

Maisie is doing nice, only fed the other day with 10g 1:1 and was happy with the rise

I 100% agree the amount of them i have been through lol, fortunately i have now managed to get them to a level i am happy with.

Last night 12 hour bulk ferment.

nice progress with today's feeding, nice and well formed bubble thick starter not watery, a couple more and i could be baking at the weekend
