Made a new to me Italian dish tonight, pasta al baffo. Typically a ham cream sauce, I made it with pancetta bc I had some on hand. The name may originate from an Italian phrase โ€œda leccarsi i baffiโ€ which means โ€œSo good youโ€™ll lick your whiskers.โ€!

- adobo, good need to freeze
- mixed berry pink peppercorn syrup, need new batch more everything plus citric acid
- grits, dbl recipe

To do:
Reduce entire bottle of port into syrup
Get better at making quenelles
Test recipe for almond lace cookies
Finalize carrot recipe
Retest sweet onion dip

You will see tho from bubbly liquid to thicker until finally just little bubbles of chorizo fat popping and everything comes together. Chorizo will now be in solid little pockets along with potatoes which have absorbed all the flavor. Add to tacos, put fried eggs on top. Eat with spoon. Enjoy!

Add 2tbsp dark brown sugar. Shake pan to combine + ensure potatoes are covered in liquid.
Cover with lid and simmer over med heat for 15-20 minutes until potatoes are mostly cooked thru.
Uncover and simmer until all liquid has evaporated. You will need to scrape bottom and toss several times

And 1-2 cloves minced garlic sautรฉ for 3 minutes until onions and garlic start to become translucent
Add roughly half teaspoon salt, pepper, chipotle powder, ancho chili powder (regular chili powder also fine)
Toss and then add 2cups of chicken broth
Add tbsp of chipotle in adobo sauce and 1 pepper

1pkg pork chorizo
Put into preheated nonstick pan with olive oil
Cook until crispy and nice
Meanwhile cut up 5-6 small washed Yukon gold potatoes maybe 1/2โ€ thick at most. Think thick small cubes.
Add half diced onion to the chorizo
