Fermented pepper mash

If you don't mind my jumping in, this is my fermenting mash of red serrano, garlic, allspice, cumin and coriander, 3% Mexican sea salt by weight. Been about 3 days, quite active. A little brine turned into a lot, lol, the glass weights are a dream. That's a cabbage leaf keeping the mash in place.

How absolutely awesome!! My buddy does a mash as well. It intrigues me. I'm currently using a 2.5% Sea Salt in mine. I'm looking forward to getting super creative with whole spices too. 🫧🫧🫧

I'm aiming for 14 to 21 days. I'll check the PH at 14 days though. And see where im at. I'm very excited for this one too, it also has ginger and thyme. I've been researching complimentary flavors. I'd love to have a few hot sauces in different colors 😍

Plums is an excellent idea! I saw a recipe with reapers and peaches so I was curious but I'd definitely have to use many in that case. I've been testing my ph meter this evening. I'm aiming for a 14 to 21 day fermentation. The whole experience is exciting 🐰🙌🌶
