Two piece solutions also come to mind. A base piece that protects the neck and top half of the skull and then a second piece for lower jaw and throat that is attached to the base with pins or latches

I do love this design and I feel like just squishing the ears oughta work tbh. That or just two small perforated hemispherical bulges for the ears, to give them a little space at least without compromising protection.
