Brunch is served.

Layers of spinach, grilled chicken, fresh mushrooms, cream cheese and green onion in puff pastry. Sauce is sauteed mushroom, onion and garlic all minced up with the reduction from grilling the chicken, a little cream cheese, parm and milk.

Fridge overnight, run thru the slicer tomorrow.

A little too much pepper in the cure for me. I could make it a little more salty too.
More mesquite & hickory. I like smoky & bold.
Rather than fruit I will add maple pellets next time, no one had them in stock & am waiting on an order.
Still 1000x better than store bought.

1st bacon assessment:
I know people like fruity pellets or chips (apple or cherry) in their bacon smoke. The cherry, even though it was less than 1/4 of my mix is too much for me.
I liked the complexity the pecan added, but it tends to burn hotter and made keeping it at 165 hard. Less next time.

Its smoke day! Bacon is cured, i showed both the lean and the fatty side for you. A little mesquite, some cherry, mostly hickory, and pecan pellets. Don't have maple yet it's coming, that will have to be for next time.
