Brown sugar. Season with salt and pepper. Spread on baking sheet. Add remaining squash to bowl. Toss with remaining oil and brown sugar and season with salt and pepper. Spread on another baking sheet and roast for 1 hour, turning halfway until tender and lightly caramelized. Arrange on platter

1 delicata squash cut into 1 inch rings
2 Tbsps maple syrup
1 cup heavy cream
20 sage leaves, coursely chopped
