Introduction to sourdough bread baking

Want to learn how to make delicious, healthy sourdough?
This course, which is suitable for baking novices, is an introduction to the sourdough process, including maintaining starters, types of flour, tools and equipment, mixing, folding, fermenting, shaping and baking.
You will gain a basic understanding of the sourdough process and the knowledge to bake a simple loaf and to experiment at home.
The course will be taught by Simon Leworthy, head baker at an artisan micro-bakery based in Hartland. Baked By Si 'The H'artisan bakery' specialises in long-proofed, cold-fermented sourdough breads made using the finest organic flours available from around the world.

Shamans have always said that it is the animals who heal us. Pascale Petitโs work demonstrates poetry as a kind of shamanism, allowing author and reader to shapeshift in the imagination, and the animals are the constant medicine in her work. Jay Griffithsโ new book encompasses how animals heal the society as well as the psyche, electrifying our minds and vitalising our cultures.
Together Jay and Pascale will create an event that shows, through both personal experience and their writing, that animals are our healers. They will be discussing their experiences, reading from their work, and opening up the conversation to the audience.
