金銀蛋浸莧菜其實是簡單又美味的夏天菜式，還不用炒不會滿頭汗。
材料是皮蛋鹹蛋（分開蛋黃和蛋白）薑片和蒜頭，用上湯更鮮味，沒上湯也無所謂。
先用多一點油中火爆香薑蒜， 最好爆到微黃，把薑蒜夾起，剩下的油加水煮開，放點鹽和糖，水量可以蓋住莧菜，放莧菜下去加蓋煮一分鐘，開蓋再煮兩三分鐘（喜歡菜軟一點可以煮多一兩分鐘）把菜夾起，湯倒掉。
薑蒜放回鍋里加少量高湯或水，加點糖和胡椒，鹹蛋黃切碎放進去煮，顏色變淺黃就熟了，再放皮蛋，最後加鹹蛋白，不要動等蛋白凝固。現在可以試味了，太淡可以加點鹽（一般不需要了）最後把湯都淋在莧菜上，完成。
菠菜也可以，沒有鹹蛋皮蛋用泡好的瑤柱，煮法差不多。
