The last like thirty minutes of fellowship of the ring is pure cinema. I've watched the whole trilogy probably several dozen times and it still manages to swell emotion within me.

The audiobook versions read by Rob Inglis are very soothing to listen too as well.

I’ll jump in this bandwagon and say I especially love the stretch in Fellowship when the Hobbits are traveling through the Shire to meet Gandalf starting with Three is Company.

The Wayfarers series by Becky Chambers. It's really not my usual sort of books but they're beautiful and human and kind. Also, pretty much any Discworld but especially the Death and Guards series. Lastly, Legend by David Gemmell, the book that started my love of fantasy. All time fave.
