Real-time follow up: this is a UX quirk in RVNC viewer. Even though I’ve got a Magic Keyboard attached, I have to bring up the virtual keyboard and type into that. It works now.
I have tried it. Even with a plain colour desktop image/lock screen, RVNC viewer can’t enter my password at the lock screen. Now I’m unsure what’s up.

I haven’t retried yet but my next steps would be to find ways to turn off all the spurious animation. I was on a very good network on the iPad side (can’t do much about the Mac side but it’s usually not too bad)
I’ve tried that and it “works” but it’s unusable. All the animations on the Mac mean that the iPad (or connection, I’m not sure) is kept too busy to accept keystrokes. Couldn’t even unlock the computer.
