Spent the week with some really great coworkers from across our city government!
I thought it was better than just soaking the potatoes in ice water beforehand. I was skeptical about the cornstarch but it really does give them a nice crispy exterior. I might experiment more next time with adding salt or spices to the corn starch slurry before adding to the fries.
The tulips I planted in the fall are on their way!
Homemade fresh cut French fries are underrated! I’ve been trying different methods for extra crispy homemade fries in the air fryer and I’ve perfected my recipe. SO GOOD

After four straight days of college visits, I can confidently say that I very much would love to go back to college.
Also, I’m tired and my feet hurt 😆
But…in the moment, it doesn’t seem so urgent.
I’ve got lasagna in the oven. My husband and our niece, visiting from OH, are safe at home. Penny is curled up in her bed. Life is good.
Life can be really beautiful and so, so good.
I’m in the middle of a very hard decision. Sometimes the hardest part isn’t the decision itself, it’s the big messy middle: The waiting, the guessing, the not knowing how things will turn out.
Lately I keep thinking about my dad’s words: if you want guarantees in life, buy a toaster.
Hosting my niece this weekend to look at colleges! We’re doing a whole tour of the front range. Colorado College, DU, CU Boulder and CSU are all on the docket. Excited to get back to the Springs and take her to Garden of the Gods! 🤩
I’ll never know and neither will you of the life you didn’t choose. We’ll only know that whatever that sister life was, it was important and beautiful and not ours. It was the ghost ship that didn’t carry us.
There is nothing to do but salute it from the shore.

This poor sweet girl spent her 9th birthday in the vet ER. She’s getting older, and along with her age she’s got some arthritis and cervical disc deterioration. 😞 we’re lucky that her grand-paw is a retired veterinarian who checks on her often, and she’s getting great care from us at home.

Today is my 13 year official anniversary working at DPL. All of it has been amazing and rewarding, not just because of the challenging work, but also because of the incredible people I’ve met along the way.
