I’m gonna buy a scythe this year! Fell in love with it as the tool of choice for managing the rapid-growing cane grass in HI. Excited to develop my pastures up here!

Store in a cool, dark place. Some people will use these eggs for up to two years, but our goal is to have plenty to get through the winter!

We crack one at a time into a little ramekin to make sure they’re good β€” have yet to come across a bad one!

A little more on Water Glassing:

28g pickling lime to 1 liter of water (1oz/quart).

Use super fresh, very clean eggs. Do not wash the eggs or handle them with soiled hands. We collect 4-5 times a day when in storage mode.

A half gallon jar fits 12-16 eggs depending on size.

Water Glassing! This egg was laid in June and cracked at Christmas! Stored in the pantry in pickling lime and water. It’s called Water Glassing and it’s the first time I’ve done it!

Very cool preservation technique!
