We crack one at a time into a little ramekin to make sure theyβre good β have yet to come across a bad one!
A little more on Water Glassing:
28g pickling lime to 1 liter of water (1oz/quart).
Use super fresh, very clean eggs. Do not wash the eggs or handle them with soiled hands. We collect 4-5 times a day when in storage mode.
A half gallon jar fits 12-16 eggs depending on size.
Water Glassing! This egg was laid in June and cracked at Christmas! Stored in the pantry in pickling lime and water. Itβs called Water Glassing and itβs the first time Iβve done it!
