Stainless is great. Very minor learning curve but they're nearly indestructible. Nice to be able to scour the hell out of them. As someone else said, heat 'em up first, spread a dab of oil in there, then do your main fat on top of that and you'll have non-stick. I do eggs in stainless daily.
