I loved playing with the malts the most. Just had to be careful not to burn the extract on the bottom of the burner. Like I could make a light colored malt with a nice hint of orange peel and slight hop accent. It was great.
When I used to homebrew, malty beer was my first priority and then would just accent with hops.
